After a blazing hot winter serving up the most delicious barbecue flavours at Grand Hyatt Melbourne, Burn City Pop-Up is back by popular demand and will be sizzling through spring, combining classic signature dishes with a selection of smoky hot new flavours for the warmer months.


The kings of meat behind Burn City Smokers Steve Kimonides and Raphael Guthrie together with Grand Hyatt Melbourne's Executive Chef Jason Camillo, have packed up their smoker trailer and towed it into the heart of Melbourne’s energetic laneway buzz to deliver fall-off-the-bone, fire laden and enticing barbecue aromas.


These boys have mastered the art of smoking with wood, combining traditional techniques with modern flavour and style. Their food comes from a passion for ingredients, respect for local produce and the ethical practices from the people who farmed it.


The new spring menu introduces mouth-watering dishes that are sure to become favourites including; Tasmanian free range baby back pork ribs, smoked lamb rump, pork scratchings, corn bread and popcorn ice cream sandwiches. This is traditional Southern American barbecue at its finest and sure to light the fire in your belly.
