The kings of meat behind Burn City Smokers Steve Kimonides and Raphael Guthrie together with Grand Hyatt Melbourne's Executive Chef Jason Camillo, have packed up their smoker trailer and towed it into the heart of Melbourne’s energetic laneway buzz to deliver fall-off-the-bone, fire laden and enticing barbecue aromas at the Burn City Pop-Up.

 

These boys have mastered the art of smoking with wood, combining traditional techniques with modern flavour and style. Their food comes from a passion for ingredients, respect for local produce and the ethical practices from the people who farmed it. Expect mouthwatering beef, chicken and pork slow-smoked over wood, the Burn City signature smoked brisket burger, home-made sauces, sides of pickles and slaw, and rich and decadent desserts. This is traditional Southern American BBQ at its finest and sure to light the fire in your belly.
