Grand Hyatt Melbourne offers a range of dining destinations. Named after its prestigious location on Collins Street in the heart of Melbourne CBD, and the innovative open kitchen design, Collins Kitchen creates dishes around five different dining concepts – Sushi, Deli, Grill, Wok and Patisserie – with a focus on local produce, and simple, uncomplicated cuisine. Collins Kitchen also offers two amazing private dining rooms; Chefs table and our Kitchen room. A variety of set menus are available and are recommended for groups of 8 or more, wish dishes designed for sharing.

Wander through the open kitchen and you can watch the Chef’s in action at the different food stations, including Grill, Wok, Sushi, Deli and Patisserie. The priority at Collins Kitchen is offering simple, authentic global cuisine using the finest local and organic produce. Executive Chef Jason Camillo leads a culinary team who will craft dishes before your very eyes

Open 7 days from 6:30am until late, Collins Kitchen offers menus for breakfast, lunch, dinner and all day dining includes an extensive wine list from a 2,700 premium bottle wine room. Our restaurant seats 180 guests with two private dining rooms including the Kitchen Room for up to 14 guests and a Chef Table for up to 10 guests.

Our famous breakfast buffet features an enormous array of dishes served from the open kitchens and is sure to satisfy any taste. This is ultimate way to start your day!

Melbourne’s finest lunchtime feast is available from Monday - Friday for only $45 per person. Visit the live cooking stations, interact with chefs, while sampling cuisine straight from the pan, off the grill or from the wok!

For an incredible culinary journey of the best dishes from each dining concept, try our famous Sunday Brunch, served each Sunday from 11:30am–2:30pm. Soak up the market atmosphere of the open kitchen as you wander through at your leisure. Create your ultimate Sunday Brunch for $75 with a glass of sparkling wine.

A traditional Afternoon Tea is served daily (2:30pm-5pm Monday-Friday;12pm-5pm Saturday; 3pm–5pm Sunday), and on the weekends, offers an extended dessert buffet with an incredible array of pastries, cakes and sweets.

The Grand Hyatt Melbourne Boutique offers the perfect gift or a take home reminder of your stay. Choose from a delicious selection of boxed items including macaroons, lemon sable, nougat, and cookies. Also on the menu is mint chilli and sweet and sour chilli sauce freshly made in Collins Kitchen. For your next celebration, there is also a delicious range of handmade chocolate truffles, boxed in 9, 25 and 90.

Private Dining

For a special occasion dinner, Collins Kitchen offers two private dining rooms, both individually styled. Featuring original artworks and a soaring ceiling, the Kitchen Room offers a spacious and sophisticated environment which seats up to 14 persons. The Chefs table seats up to 10 persons and is positioned directly off the show kitchen, allowing diners a closer experience of the theatrical show of the chefs.

A variety of set menus are available for Private Dining, which are recommended for groups of 8 or more. Dishes are designed for sharing.
